Recap - Masterclass Emmanuel Ryon

Not every day we get the chance to welcome a Meilleur Ouvrier de France to Belgium, so the master class was full in no time. On Tuesday 17 and Wednesday 18 October, however, this was the case at the Carpigiani Academy. We welcomed Emmanuel Ryon, M.O.F. Glacier and Champion du Monde Glacier, for a Masterclass Ice Cream. During 6 intensive but very instructive hours, we got an insight into his working methods, discovered his views on the use of alcohol and learned, among other things, how to make fruit givré. It was surprising to see that the techniques used need not be time-consuming or complicated at all. With his experience of running two of his own businesses in the heart of Paris, he knows better than anyone how to create beautiful finished products in no time at all.

A fun fact: One participant who had participated on Tuesday was testing out Fruit Givré the very next day.
